Digital is just '1's and 0's' huh?
In theory, yes! In practice, these two states are represented by voltages. These voltage signals are very small, around 0.5V (for S/PDIF). The change between the two voltage states which occurs very quickly can be influenced by the transmission 'quality'.
The higher the transmission bandwidth, the steeper the edges of the square waves representing the digital ones and zeroes. Compared to computers, which transfer digital data in chunks that don’t require specific timing between sender and receiver, digital audio signals meanwhile are constant data streams that are highly exposed to interference. To avoid losses the digital processor must handle the signal perfectly synchronously.
Variances of in timing can cause sonically detrimental jitter. This can have numerous sources, one of those is the transmission medium (the digital cable), with its connections, impedance variations, potential signal reflections.
That’s a short explanation on why cables can sound different even though it's only 1's and 0's.
